To get to Hong Kong, grab a bus outside exit 7 on the arrivals concourse. Tickets cost between HK$200-HK$300 one-way and can be bought from the driver.
You can also take a train to Hong Kong at the Guangzhou East Rail Station. First, take the Airport Express bus 6 to the Tian He building. From there the train station signs are everywhere and it is only a few minutes walk to get there.
